Cold tomato and bell pepper soup with strawberry and feta cheese

Ingredients

– 6 ripe tomatoes

– 400 g strawberries

– 2 red peppers

– 100 g stale bread

– 100 g feta cheese

– 1 sachet ARIAKÉ vegetable broth

– ½ red onion

– 1 lime

– 1 garlic clove

– salt and pepper

– olive oil

The steps

  1. Rinse tomatoes, peppers and strawberries under running water. Hull strawberries and cut into small cubes
  2. Remove stalks from tomatoes and peppers, then remove seeds. Peel the red onion, then roughly chop the tomatoes, peppers and onion.
  3. Pour 33 cl of water into a saucepan. Add one sachet of ARIAKÉ vegetable stock. Bring to the boil, then leave to stand off the heat until completely cool.
  4. Place the tomato pieces, peppers, onion, coarsely broken stale bread, lime juice, vegetable stock and peeled and degermed garlic clove in the bowl of a blender. Season to taste with salt, pepper and olive oil. Blend until smooth.
    Refrigerate for 1 hour.
  5. Pour into serving plates or bowls, then crumble a little feta cheese over each one. Add a few pieces of strawberry. Enjoy.
