Thai broth with salmon and quinoa

– 600 g salmon

– 200 g quinoa

– 200 g button mushrooms

– 25 cl coconut milk

– 1 leek white

– 2 sachets ARIAKÉ Thai broth

– salt and pepper

– olive oil

Les étapes

  1. Rinse the leek and mushrooms under a trickle of water. Remove the rootlets from the leek. Chop finely. Cut mushrooms into thin strips.
  2. Cook quinoa in boiling water for 15 min. Drain and set aside.
  3. Remove the skin from the salmon, then cut into medium-sized cubes.
  4. Pour 1.5 liters of water into a saucepan. Add the 2 sachets of ARIAKÉ Thai broth. Bring to the boil. Add coconut milk and chopped leek.
  5. Arrange 50 g cooked quinoa on each serving plate. Add 150 g raw salmon cubes, then pour the hot broth over each plate.
