  • 4 cups Gourmand ready-to-use chicken broth
  • 400 ml coconut milk
  • Chicken breast, diced
  • Mushrooms (straw, shiitake or button)
  • Lemongrass, kaffir lime leaves and galanga (or ginger)
  • Red pepper (to taste)
  • Fish sauce and lime juice for seasoning

The steps

  1. Heat the chicken stock and coconut milk in a saucepan.
  2. Add the chicken, mushrooms, lemongrass, kaffir lime leaves, galanga and chili pepper.
  3. Simmer until the chicken is cooked.
  4. Season with fish sauce and lime juice to taste.
  5. Serve hot.
